Our founder, Chef Aki Tanaka, grew up between Tokyo and California, blending the refined artistry of Japanese cuisine with the warmth and openness of the West Coast. Every dish tells a story — from the precision of our sushi to the bold flavor of yakitori grilled over glowing binchotan charcoal.

Our Space
Designed to evoke a sense of calm and tradition, our restaurant combines natural wood textures, soft lighting, and modern Japanese architecture. Meet the Chef

Chef Aki Tanaka spent over a decade perfecting his craft in Tokyo before returning to California to open Umi to Hi. His cooking philosophy is rooted in respect — for ingredients, for the guests, and for the shared experience of dining.
