Our Story
Born on the Monterey coast, Umi to Hi is where Japanese tradition meets California creativity. The name — meaning Sea and Fire — reflects our philosophy: balance between calm and intensity, craftsmanship and spontaneity.
Our founder, Chef Aki Tanaka, grew up between Tokyo and California, blending the refined artistry of Japanese cuisine with the warmth and openness of the West Coast. Every dish tells a story — from the precision of our sushi to the bold flavor of yakitori grilled over glowing binchotan charcoal.
At Umi to Hi, we believe food is more than nourishment — it’s connection. Every detail, from our handcrafted ceramic plates to the flicker of the grill, is designed to bring people together and celebrate the beauty of balance.

Chef Aki Tanaka spent over a decade perfecting his craft in Tokyo before returning to California to open Umi to Hi. His cooking philosophy is rooted in respect — for ingredients, for the guests, and for the shared experience of dining.
